Types of Japanese tea
煎茶 SENCHA
日本で最もよく飲まれているお茶。
茶摘みされた茶葉を蒸して加熱し、揉んで乾燥させてつくられます。
Tea most commonly consumed tea in Japan. It is made by steaming, heating, rubbing, and drying tea leaves that have been picked.
玉露 GYOKURO
日本茶の中でも最も高級なお茶。
旨みと甘味の成分が多く、まろやかで濃厚な味わいです。
The highest quality tea among Japanese teas. It has a rich and mellow flavor with abundant components of umami and sweetness.
抹茶 MATCHA
てん茶を石臼などで挽いて粉末にしたもの。茶道などで用いられるほか、菓子や料理でも使用されます。
Matcha is made by grinding tencha using a millstone, among other methods. It is used in the tea ceremony and also in sweets and cook.
ほうじ茶 HOJI CHA
茶葉を高温で焙じたもの。低カフェインでとても香ばしく、口当たりがよいため食事中のお茶におすすめです。
Tea leaves roasted at high temperatures. It has low caffeine content, a very aromatic fragrance, and a smooth taste, making it suitable for tea during meals.

How to brew Japanese tea
急須を使ってお茶を淹れるのは手間がかかりますが、この方法が一番、日本茶の美味しさを引き出すことができます。

Brewing tea using a kyusu (Japanese teapot) requires effort, but this method can bring out the best flavor in Japanese tea. Take a moment away from the daily hustle, whether for yourself or for someone special, and enjoy a relaxing time.
煎茶 SENCHA ※2人分 Tea brew for 2
お湯の温度 80℃ | 茶葉の量 小さじ約2杯(6g) | 抽出時間 20秒前後
人数分の湯呑にお湯を注いで湯冷ましをします。(煎茶の適温は80℃)
Pour hot water into each yunomi (teacup) for each person. (The recommended temperature for sencha is 80℃)
急須に茶葉を入れ、湯呑で冷ましたお湯を急須に注ぎます。約20秒茶葉が開くまで待ちます。
Pour tea leaves into a kyusu (Japanese teapot), and then pour the cooled hot water from the yunomi into the kyusu. Wait for about 20 seconds until the tea leaves unfold.
茶葉が開いたら湯呑へ注ぎます。少しずつ交互に注ぎ分けると、お茶の濃さが均一になります。
急須にお湯が残らないように最後の一滴まで残さず注ぎましょう。
Once the tea leaves have opened, pour the tea into the yunomi. Pouring a little at a time alternately ensures an even concentration of the tea.
Be sure to pour it all the way to the last drop.
玉露 GYOKURO ※2人分 Tea brew for 2
お湯の温度 60℃ | 茶葉の量 小さじ約2杯(6g) | 抽出時間 50秒前後
お湯を一度急須に注ぎ、急須から湯呑へお湯を入れ替えてお湯の温度をしっかり下げます。
器を移すごとに約5~10℃温度が下がります。
Pour hot water into each yunomi (teacup) for each person. (The recommended temperature for sencha is 80℃)
急須に茶葉を淹れ、湯呑のお湯を注ぎます。お湯は茶葉がつかる程度の量が目安です。

50秒ほど待って湯呑へ注ぎます。少しずつ交互に注ぎ分けます。最後の一滴まで残さず注ぎましょう。

ほうじ茶 HOJI CHA ※2人分 Tea brew for 2
お湯の温度 95℃ | 茶葉の量 小さじ約3杯(6g) | 抽出時間 30秒前後
ほうじ茶は高温で入れると香りがよく出るため、湯冷ましは必要ありません。
Hojicha releases a good aroma when brewed at a high temperature, so there is no need for cooling the water.
大きめの急須に茶葉を入れ、沸騰したお湯を直接注ぎます。
香りが付くことがあるので専用の急須が用意できるとよいでしょう。
Place tea leaves in a large kyusu and pour boiling water directly into it.
(It's advisable to use a dedicated kyusu to avoid retaining any residual aroma.)
約30秒、茶葉が開くまで待ちます。
茶葉が開いたら、煎茶と同様に少しずつ交互に注ぎ分けます。最後の一滴まで残さず注ぎましょう。
熱湯の取扱いには充分にご注意ください。
Wait for about 30 seconds until the tea leaves unfold.
Once the tea leaves have opened, pour the tea into the yunomi, alternating a little at a time. Pour all the way to the last drop.
(Be cautious when handling hot water.)
